Humus
| 30 | Oz | Chickpeas (Garbanzo beans) |
| 3/8 | Cup | Tahini |
| 3 | Oz | Olive oil |
| 4 - 6 | Lemons | |
| 12 | Cloves | Garlic |
| 2 | Tbsp | Chili powder |
| 1/2 | tsp | Ground pepper |
| 1 | tsp | paprika |
The quantities above are just a start. I always adjust to taste and i'm not real good about writing down my adjustments.
Put all the ingredients in a food processor and mix until smooth. Adjust to taste.
Tips:
Try a batch with more than the indicated amount of Tahini so you'll know how Tahini affects the overall taste.
I like to use roasted or smoked garlic for Humus. Again, use garlic to taste. While you're at it, "the best defense is a good offense." This is especially true of Humus. Get everyone around you to sample the Humus. They'll be glad they did.
Start with 4 Lemons and add to taste.
