Waffles
Pancakes

4.5 Cups Flour
3 Tbsp Powdered Sugar
2 Tbsp Baking Powder
1/2 Tsp Salt
4.5 Cups Milk
4   Eggs
1/2 Cup Oil
2 Tbsp Vanilla

I use bread flour.

Sugar. The powdered sugar was actually a mistake. I was making waffles one morning and discovered that there was no granulated sugar in the house. I found some powdered sugar and used it instead. My family loved them and wondered what was different. I couldn't remember, but it bothered me all week. The next time i made waffles, as i was putting the sugar in the batter, it hit me. I've been making the batter with powdered sugar ever since.

Baking Powder. The quantity shown is for Rumford baking powder. If Calumet or Clabber Girl is used, increase the amount to 2 Tbsp and 2 Tsp. Calumet and Clabber Girl are Aluminum based baking powders, Rumford is Aluminum-free. If you make batter and then leave it in the fridge for awhile (I would make batter on Sunday mornings, put in in a container, and the kids would use it to make pancakes before school the next week) the Rumford will go flat quicker.
